Note also the rise in consumption of fruit juices and
smoothies in drink-only occasions (up from 5.2% in 2023 to
5.5% in 2024).15 This is partly down to growing innovation
in health-orientated health shots, such as the Plenish
range, which is winning growing distribution in foodservice.
Research shows that health was by far the most prevalent
foodservice new product development trend last year.16
Other examples include venues such as Joe & the Juice
and Fleet Street Press, which specialise in premium juices,
smoothies and health shots that sell for a significant
premium and have fostered loyal followings for these
operators. For example, Joe’s signature serves include Herb
Tonic (a blend of apple, ginger, ice, olive oil, pepper and
turmeric) and Green Mile (apple, avocado, broccoli, ice,
lemon and spinach) which sell for £8.90 per serve.

Functional health shots are becoming a more common sight
in speciality coffee houses, offering drinkers an opportunity
to pep up their lattes with everything from lion’s mane
mushrooms to turmeric. Black Sheep Coffee, for example,
has added a trio of Functional Lattes, comprising Beauty
Blend with marine collagen, Gut Blend with prebiotic fibres
and Brain Blend with lion’s mane.
It’s not only juices that appeal to the new generation of
health-conscious – and, as we’re about to explore, generally
more affluent – consumers. The March 2025 launch of

development trends in foodservice in the past year,
at least five related to health.16 General health claims
were most prevalent, with an index of 28%,16 followed
by specific health claims (12%)16 and high protein
content (10%).58 Functional health benefits (8%)16 and
claims relating to fermentation (3%) also featured.16
